Recipe: Buffalo Shrimp Tacos

I've been in a little of a food rut lately. I don't know what I "feel" like eating so I haven't been pre-planning my meals. Combined with the fact that over the last several weeks I've tried to make a conscious effort to eat less meat. I'm not sure I would ever go back to being completely vegetarian, but I like the idea of limiting poultry, beef, and pork. Every now and then I'm going to crave these things, but as long as I'm not missing them why not focus my diet on fish, seafood, beans, and protein rich whole grains like quinoa?

But sometimes I get tired of eating beans, lettuce, veggies, etc all the time. I like lots of flavor and these combinations can sometimes taste the same. I also want meals to be quick fixes since I don't get home from the gym until 7 pm on most nights.

I saw this recipe pinned on KG's Pinterest page (you all know you're addicted too, don't play!) and it inspired me. I don't really fry anything at home anymore since that's pretty much counter intuitive to weight loss, and I wasn't really feeling chicken as I haven't made chicken at home in a couple weeks.

So enter Buffalo Shrimp Tacos.




I'll try to remember the ingredients from memory. This was for 1 person.

3 corn tortillas
1/4 avocado - cut into 3 slices
4 ounces (15 medium) shrimp
1 Tablespoon Frank's Hot Sauce (because there is nothing else for buffalo flavor)
1 1/2 Tablespoons Blue Cheese crumbles
Shredded lettuce for topping
Your favorite ranch dressing for drizzling (approx 1-2 teaspoons) [I used Fat Free Kraft b/c it's what I already had]

1. Spray skillet with non-stick cooking spray. Saute shrimp until cooked through. Transfer to bowl and add hot sauce, toss to coat.

2. Heat each corn tortilla in clean skillet for a few minutes on each side until warmed and lightly toasted.

3. Top each tortilla with 1/3 of shrimp, 1/2 T of blue cheese, 1 slice avocado, lettuce and a drizzle of ranch dressing.

For 3 tacos it is approximately 450 calories and 33 grams of protein. It is a little higher in fat (17 g) because of the shrimp, tortilla, avocado + cheese combo, so you could adjust to using low fat cheese if you track fat (I personally don't), but remember avocado and shrimp are good fats and your body needs these.

I'm currently obsessed with the shrimp/hot sauce/blue cheese combo that I made it into a salad for dinner Sunday night and again for lunch on Monday. And now I'm out of shrimp - such a shame!

that looks awesome! anything buffalo style has my vote. i crave that flavor way too often.
